Spaghetti With Tomato Sauce (Vegan)
1 cup plus 2 T. diced canned tomatoes
1 T. olive oil
1 ½ cloves of garlic, minced
1 onion, chopped
1 tsp. dried basil
1 tsp. dried thyme, chopped
1 tsp. dried rosemary
½ tsp. chili powder
Pinch of sugar
Salt & pepper to taste
¼ cup sun-dried tomatoes, chopped
½ box spaghetti
Heat oil in saucepan, add garlic & onions & sauté over medium heat until soft and golden. Add tomatoes, basil, thyme, rosemary, and chili powder & simmer gently, uncovered for about 30 minutes, stirring occasionally. Mix in sugar, salt & pepper. Add the sun-dried tomatoes and heat through for a few minutes. Remove the rosemary sprigs, if fresh rosemary is used.
Bring a large saucepan of water to a boil, and cook the spaghetti according to the instructions on the package. Drain and divide the spaghetti among 4-5 bowls or plates. Spoon the tomato sauce over the top and serve.
