POTATO CORN CHOWDER (Vegan)
3 cups veggie stock & water (1 ½ cups each)
2 1/4 cups potatoes, peeled & diced
½ onion, chopped
1 clove garlic, minced (use jarred, minced garlic, if desired)
½ tomato, chopped (can use canned, diced tomatoes that have been drained)
½ tsp. dried basil
½ tsp. dried marjoram
½ tsp. dried thyme
½ tsp. salt
¼ tsp. black pepper
½ frozen corn
In a saucepan, cook the potatoes in stock & water for 30 minutes, along with the onion, garlic, tomato, spices, salt, and pepper.
Take out a cup of the potatoes using a slotted spoon and mash them, using a fork, and then add them back to the saucepan.
Mix well, add the corn and cook for another 5-10 minutes.
