1/2 lb. pork, chicken, or beef
1 T. canola or vegetable oil
1 medium onion
1 medium green pepper or any other colored pepper
tortilla shells about 5-6
1 1/2 T. fajita seasoning
1/4 cup water
Directions: Remove any extra fat from the meat and cut into small pieces. Clean onion & pepper and cut into thin slices.
Heat skillet on medium high heat with meat & oil in pan. Cook the meat until no longer pink, then add vegetables. Cook until onions are translucent. Put the water and seasonings together in the measuring cup and stir until dissolved, then add to the skillet until cooked through. Place a heaping tablespoon on a tortilla shell. You may add a dollop of sour cream and/or grated cheese , if desired. Roll starting at one end, then roll the sides in. Enjoy!!
