Breakfast Casserole

Ingredients:

1 medium size potato

½ pound bacon or sausage

3 English muffins

1 bag mild cheddar cheese (8 ounce)

6 eggs

¾ cup milk

½ tsp pepper

1 tsp salt

2 TB oil to fry potatos


 

Directions:

  1. Preheat oven to 450

  2. Spray casserole dish with oil to prevent sticking

  3. Cut potato into ¼ inch cubes

  4. Brown meat.  Drain grease

  5. Fry potatoes on medium heat

  6. split muffins in half. Line bottom of pan with ½ muffins

  7. place eggs, milk, salt and pepper into large bowl and whisk until blended

  8. Add cheese, meat and potatoes to bowl and mix with spoon until all items are evenly coated.

  9. Pour mixture over muffins

  10. Put in oven and bake about 15 minutes or until egg is cooked.  (It should not jiggle when you move it)

  11. Cut and serve hot
