Crepes with Caramel Cream Cheese and Apple Filling


  • 1 cup all-purpose flour

  • 1/4 teaspoon salt

  • 2 large eggs

  • 3/4 Cup milk

  • 1/2 Cup water

  • 3 Tbs butter

  • 2 Tablespoons sugar


Directions for batter

  1. In medium bowl mix dry ingredients; whole wheat flour, all-purpose flour, salt, and sugar.

  2. In large bowl, whisk together all wet ingredients eggs, milk, and water until smooth

  3. Melt butter.  Whisk butter into wet ingredients until no lumps are present.

  4. Cover batter and refrigerate for at least 30 minutes and up to 2 days.


Cooking directions

  1. When you are ready to make crepes, lightly oil cooking pan.  Make sure oil is coating pan, but not sitting in puddles.

  2. Heat pan over medium flame.  

  3. When skillet is fully heated, use a ¼ dry ingredient measuring cup to pour batter into middle of hot pan

  4. Right away, begin moving pan in circular motion to allow the batter to run and fill the skillet.  Batter should cover pan very thinly

  5. (If batter is too thick and won’t run and spread easily, whisk in a couple tablespoons water and try again.  If pan is too hot and batter gets too hard too fast, lower heat on burner)

  6. Once the batter has spread over the surface, return the skillet to the burner and cook until golden brown on bottom. then flip and cook until golden brown on second side.

  7. remove from pan

  8. Fill with choice of filling


Caramel cream Filling:

2 cups brown sugar

4 tb butter

8 ounces cream cheese


  1. Place all ingredients in medium saucepan

  2. heat on medium low stirring constantly until all ingredients are melted  and begin to boil.

  3. remove from heat
