Homemade Potato Chips


1 large potato per person  or 2 medium potatoes per person

2 cups cooking oil



1.  Wash and dry potatos

2.  Cut off bad spots or any green places on potato

3. Using a sharp knife, thinly slice potatos.  Try to slice chips evenly. 

4. Place several napkins or paper towels on a plate to put chips on when you remove them from oil.  This helps to remove extra oil from chips.

5. Put cooking oil in large saucepan.  Turn heat to high to heat oil watching oil to make sure it does not get too hot.

6  When you think oil is hot enough, use tongs to place 1 chip in oil.  If chip sizzles and comes to top, oil is hot enough.  (You may need to turn the heat down to medium high if chips cook too fast)

7.  Put chips in oil.  Place enough chips in that the top surface of oil is covered with chips, but not so many that chips cannot move.  Allow the chips to cook on one side until they are beginning to turn slighlty brown,

8.  Using tongs, turn chips over to allow them to cook on other side.  Remove chips before they become over-cooked.  Place chips on plate and lightly salt.

9  Repeat until chips all all cooked.

10.  Allow oil to cool completely before cleaning up.
